Last night we made pizzas for tea. I made the dough and rolled them out then the kids chose their own toppings and gobbled them up when they were cool enough to eat.
This pizza was my favourite of the two I made. It had a base sauce made out of 1 can of tomatoes processed with some garlic, extra virgin olive oil, sweet basil, and salt and pepper, on top of the sauce there was mushrooms, ham, salami, red onion, garlic, mozzarella, and parmesan, plus a drizzle of extra virgin olive oil. I really think that the oil I put on just before baking made this a perfect pizza. When the pizzas came out, some of the oil had moved out onto the edge of the pizza and formed a lovely crunchy but soft taste sensation. Mmmm.
This other pizza had the same ingredients apart from the parmesan and oil, and was a great pizza, but the other one was on a whole different playing field even though they were made and baked at the same time on the same tray. The kids loved putting their own toppings on their pizzas too, and ate them all up! We'll definitely do this again.
Tonight as a side dish I made this delicate little salad of peeled carrots and cucumber, then I added some lemon juice, olive oil, finely chopped garlic and a little salt and pepper. It was lovely and fresh to eat.
